Grilled Lemon Halloumi

Serves 2, depending how much you like Halloumi!

Ingredients:

2 unwaxed lemons
1 garlic clove – crushed
Pinch of salt flakes
1 teaspoon pink peppercorns
1 tablespoon runny honey
2 tablespoons olive oil
250g block Halloumi cheese – cut into slices 1 ½ cm thick
1 tablespoon chopped fresh Dill

Method:

• Heat the grill to its hottest.
• Slice one lemon into rounds of 5mm thick.
• Using a pestle & mortar, crush & pound the garlic, sea salt and the pink peppercorns.
• Add the honey, olive oil and a good squeeze of lemon juice from the other lemon.
• Rub the lemon slices and the cheese slices with the mixture or spoon over.
• Place all in an ovenproof dish that will fit under the grill, or on a baking tray.
• Put under the grill until the cheese starts to colour, watch it does not burn.
• Once cooked one side, turn over to grill the cheese on the other side.
• Serve sprinkled with the fresh dill and any remaining juices drizzled over.

Delicious served as a starter with some fresh salad leaves and warmed pitta bread.
